Hi. ‘Sup? I, am a dude, who doesn’t know what to do in his life. Anyway, let’s blog for the time being. I made some fried calf’s liver, with some creamed sprouts and some baby onions in a cream bechalem. It actually all worked together really well.
Okay, to start, I boiled some brussels sprouts, drained them and put them in the oven with some butter for 10 minutes, I removed and added some hot cream, then I put it back in the oven for 10 minutes. I then made my onions. I braised them for 30 minutes. Then I made a bechalem and put it on the onions. I then preceeded to fry my liver. I fried it for about 2 minutes a side. Then I removed the liver, I added some madeira, reduced it to a syrup, added some stock, reduced it a bit more, then enriched with butter. It was nice. The onions were great, though I wasn’t the biggest fan of the bechalem. I really like liver, it’s really nice. The brussels were good too. Nice and creamy.
Well that was cool. Sorry for the short blog, a lot of what I did was old news kinda. Like I had made the master recipe each time. Anyways, you probably have something better to do, so I guess I’ll just, go.
