Hi guys, I am still not dead. I know right, annoying. All jokes aside, I haven’t been very productive the last few days, I was with a friend. However I will get back on the horse as soon as possible (tomorrow)! Friday, I made just one recipe, and it was tiny so I didn’t blog it, basically I blanched some green beans and mixed it with a parsley and shallot butter (maitre d’hotel butter) They were really good, the butter got absorbed beautifully. Anyway, today I made gratinated cod.
To do this, I fried some mushrooms in a lot of butter to just brown them. I placed some fish in a pan, spread the mushrooms on top and added some vermouth. Then, I put it in the oven for 12 minutes until cooked. Then I drained the fish, and reduced to one quarter. After that, I swirled in a beurre manié (butter with flour), poured the sauce over the fish, added some grated cheese and put under the grill for a couple minutes. The fish was well cooked, I don’t particularly like cod (this was a Norwegian type called Skrei) because it doesn’t taste very interesting, but it went well with the sauce. The mushrooms didn’t quite sit right with the fish, it doesn’t actually taste very french. Anyway, I liked it.
Well that was nice. I was going to do 3 recipes today, but they didn’t have the right ingredients at the shop, so I settled at one. But 3 tomorrow guaranteed.Anyways, I gotta go. Bye
