Okay, hi. It’s almost new year, and with new year, comes no more christmas, which is sad, but that’s life. Whatever, let’s get on with the recipes. Today I made a two course meal, plus, we didn’t end up eating at midnight – I know, impressive am i right? I started off with some artichokes. We saw them in the store, and I know it’s not the season, but I wanted to get some artichoke recipes done.
So, I boiled them for 40 minutes ( 30 would have been better, they were a bit overdone) with a cheesecloth on top to keep the moisture. Then I drained and removed the choke. I’ve never done this, we usually just remove it when we get to it. It’s hard. You make a hole in the middle, then scoop out the choke with a spoon. Anyway, a few blasts of steam in my face later, 3/4 of the choke is removed but it’ll do. I also made a sauce to go with it. I made it by reducing some lemon juice, then whisking in some butter piece by piece. It was okay, it was very lemony. It also didn’t work at all well with the artichoke, despite her saying that it goes with them.
Now I made a cream of spinach soup. I started by frying some onions in some butter, then I added some finely chopped spinach. I covered and wilted for 5 minutes. Then I added some flour and cooked for a further 3 minutes. Then I added some boiling chicken stock ( thanks Dad for letting me use your wonderful stock!) and boiled for 5-10 minutes. After that, I whisked some egg yolks together with some cream and incorporated the boiling soup. Then I returned to the pan and heated until almost boiling. It was so so good. It will become a regular I think. It was slightly under seasoned, but nothing that can’t be solved with a bit of salt.
Well that was nice! I’m looking forward to 2021 (though the name is literally 2020 won, which doesn’t bode well) and I hope it’ll be better that this year. Anyway, I gotta go snort some pineapple juice, bye!
