Okay I’m back and stronger than ever. Tody I made eight recipes. Setting my new personal best! Because I made so many, I won’t enter into as much detail as usual. At lunch, I made rice, cucumbers and braised leeks. The cucumbers were braised in butter. They were a revelation. I made them before, but the cucumbers were slightly bitter so i couldn’t get the real joy out of them but this time they were spectacular. So i braised them in butter (put them in butter and in the oven for an hour) and smothered them in a mornay sauce. Then put the back in the oven for 5 minutes. The leeks I put in some water and butter and on the stove for a while. The rice I put in some water to boil until tender, then steam for a half hour. Then put some butter in.
Next, I made veal burgers, green beans and sauteed mushrooms. To do the burgers, I fried some onions, added some tomatoes cooked for a minute, and put it in a mixing bowl. next, mince some veal and ham together and add to the mixing bowl. Form the patties, dredge in flour and refrigerate. Now the mushrooms. To start, I made a brown sauce. To do this, I fried some carrots, celery, onions and ham in oil, added some flour and cooked it out. Then whisked in some stock and tomato paste and let simmer for a while. I sautéed the mushrooms, added some madeira, and stirred the sauce in. for the beans, I just blanched them and put butter on them. I then fried the steaks, added some stock, reduced and added some butter. It was awesome. All of it. But I’m tired and I’m done for today.
