Pinch punch first of the month no returns! Happy december folks! the christmas season is officially upon us ! And with christmas, comes food. Today I made paprika chicken breasts (Supremes de volaille archiduc). I’m not gonna lie these were pretty dope! I also made parsleyed turnips but they were made in the same way as Thursday but you just add some parsley and butter at the end.
To make the chicken, I long fried some onions in some butter and some paprika for ten minutes covered, rolled the chicken in the butter and put it in the oven… still covered, for 25 minutes (she says 6 but really, don’t make me laugh). Then remove from the oven, take out the chicken, and make the sauce. To do this, I put in some vermouth and stock ( personally I used a court-bouillon, which actually ended making it slightly too salty, but it was still good) and boil it down until syrupy. Then add some cream and continue reducing a tad. I really liked it, mum wasn’t totally convinced. We only had smoked paprika and it would have worked much better with non-smoked. As I say, I liked it.
So that was a nice meal! I’m excited about christmas, I mean… Who isn’t? Aaaanyway, I gotta go now, bye!
