Cool beans! Today I didn’t cook much, I had forest day (every thursday I go to the forest) so I didn’t do anything at school. It will be a short review because of this. I made a Cream of Mushroom Soup. I fried some onions and mushroom stems and prepared a vegetable stock (we didn’t have enough stock and I have made this once before and I made a veg stock then so I know it works). To do this I boiled some water with some dried shitake mushrooms, some parsley, some onions, some celery and some carrots.
Then I added some flour to the mushrooms and onions and beat for 3 minutes over a moderate heat. Then add the stock and boil for 20 minutes. Meanwhile, fry some mushroom caps in a covered saucepan for 5 minutes. Add them to the soup and simmer for 10 minutes more. After that, I whisked some egg yolks with some cream and slowly whisked the soup in. Then returned it to the heat and heated for 2 minutes more. This is my problem: Last time I made it without the yolks and cream and it was better. The cream diluted it too much. A few shakes of salt later and it was still damn good!
