I made a spinach mould today. It was actually really nice. I started by making a spinach purée (recipe numero uno) by blanching some spinach and then cooking it in butter, then puréeing it. Then I fried some onions put them in a mixing bowl, then added breadcrumbs, cheese, and eggs. After that, I beat in slowly some milk to make a kind of custard. Then I stirred in the spinach and pout into a greased breadcrumbed mould, then put in a water bath and in the onion for 30 minutes. Then I took it out, un-moulded it and it wasn’t cooked. Merde. I put it back in to the mould and cooked it for 30 minutes more. Every time I checked it it had puffed up like crazy. Finally. It was great! It would be good for a picnic.
