Okay. Today was expensive. I’m not saying it was good, (though it was) but if you judged a dish by excess alone, this would rank high. I made something called Tournedos Rossini. Now basically, it’s a fillet steak , with foie gras and truffles with a madeira sauce. 🤯 . Why tho? Anyway, I also braised some celeriac so we’ll start with that. I peel and chopped it, I blanched it, I fried some onions, put the c in the o and I added some bacon. I put in some vermouth and stock, and put in the oven.
Okay, this is where the fun begins. I put some cut up foie gras in some madeira and some stock and placed over a bain marie for 10 minutes. Then I put some truffle slices in a pan with some butter and madeira and heated for 5 minutes. Then I fried some filet steaks in butter for about 2mins a side, then I removed them from the pan, I poured in the juices from the foie and truffles and some stock and madeira. She uses some starch, but I didn’t use it because it aint that healthy. I reduced it and plated up. I plaed some artichoke hearts on the bottom, then the steak, the foie on top and the truffles and sauce to garnish. It was truly a great dish. The truffles didn’t have any taste to speak of, we paid a lot, for nothing. Thanks local totally unnamed shop. The whole thing was good though, the celeriac didn’t work super super well, I’m not a huge fan, but it was still nice.
So I’m broke now. I’m just kidding, but that was defo excessive. ANyway, I gotta go because grandma tried to poison me… again. This time with ham…
