Hi guys, I’m slightly behind (again). Even with my new writing in front of films priveliges, the power of the Breaking Bad is great. But hey, I’m here now soo, better nate than lever? 3 more recipes, with, one of my favourites: Chikken! I made it with a delicious beurre noisette sauce, and served it with potato cakes and leeks.
To start, I braised the leeks. I took them, cut them up, put them in some butter and water, and put them on the stove covered for half an hour. Basically like Tuesday. But then, I grated some cheese on them and put them under the grill just before serving. Now, the chicken. I floured it, then browned it on both sides in clarified butter, then lowered the heat, and cooked it for half an hour, turning every 5 minutes. Meanwhile, I grated some potatoes and mixed them with some cream cheese, flour, seasonings etc. Then I fried them for 10 minutes a side. To make the sauce for the chicken, I poured in some clarified butter and reduced it with some lemon juice and parsley.
