Okay. Nice. Im struggling to find intros already and its only been a week. Great start, people! Okay, seriously though. This challenge is starting to get fired up. This morning I made Scrambled Eggs and had it with smoked salmon for breakfast. It was divine. We make really good scrambled eggs so the texture or method wasn’t too different.
I beat the eggs for longer that you think is enough. Then I took a lot of butter and melted it/smeared it on the bottom and sides of the pan. I then added the eggs and let it cook on a very low heat. I then stirred in some butter at the end to render it very creamy. Deeeeelicous.
I then proceeded to make a meat stock. I boiled some beef, some bones and a chicken carcass from Thursday in water with herbs and veg until it was intense. And god was it. What’s interesting is that for the brown stock I roasted the meat and then boiled it, but here I didn’t and it was a nicer stock. I also have a theory. What if you boiled exactly 100 g of beef for 7 hours. The flavour in the meat would be gone (or at least very much less). Will it become lighter? If not, that begs the question: what is taste?
Now I made supper. I made burger patties, with mash and an awesome beef stock reduction. I wont go to into too much detail for the most part but the mash I’ll tell. I boiled then long fried 2 heads of garlic in lots of butter. You heard me, 2 heads. Then I took some flour and put it in the butter and garlic to make a kind of roux. then I took some boiling milk and mixed it in. I then added that to 2.5 lbs of mashed potatoes. It ended up very weird. Over handled. Flour and potatoes dont mix very well. But the meat sauce and the burgers do. In today’s society I’m so used to having burgers with a salsa or something like that, it’s so different and lovely to have it with a meat sauce. The whole thing (including the mash) was soo good.
