Right then! I am incredibly confused by today, like really confused. It put my whole knowledge (or what I thought to be knowledge) about steak in question. But more on that later. I have a salad to finish! I blanched some cauli, then mixed it with the salad, then made some mayonnaise (a recipe!) by, you know how to make mayonnaise I dont have to tell you. WRONG. I need the read time so I’m sorry. I whisked an egg yolk for a minute (that’s different, it’s supposed to increase the absorbivity) then I added some mustard powder and some vinegar and whisked a bit more. Then beat in the oil drop by drop. It ended up like thick emulsified vinagrette which wasn’t cool but hey, I then mixed it with the salad and added some tuna. It ended up oily and like posh tuna mayo. I didn’t really like it.
Now the confusing part. We bought the most beautiful steak. It was marbled, it was a lovely dark colour, any steak professional would tell you that it was a good piece of meat. It was really exciting. I then (yes I’m upping the tension by explaining the recipes before telling you what was confusing) Cored, brushed in oil and seasoned some tomatoes. Then I put them in the onion for about 10-15 minutes. I rubbed the steak with some pepper ( I made pepper steak) and let it marinade for 30 minutes. Then I seared it a few minutes a side, removed them from the pan and let it rest. I added some stock and some cognac and stock to the pan and let it boil. After that, I whisked in some butter. Then I served it all. The sauce was less a pepper sauce and more of a brandy sauce. Finally the confusion, the steak was tasteless. It was perfectly cooked too! It also had a weird texture, almost spongy. So that was dissapointing. Too old? I don’t know…
That wasn’t the best. Now if you’ll excuse me, I have to find a way out of this Chipotle bathroom that I got stuck in 🤔 . Now what if I tried the lock again…
