This is yesterday’s post (I’m posting on the 14th) because I didn’t have time to write yesterday. It was a good day though. In the morning I made Shirred Eggs. They’re not really our thing. I got it right (our grill isn’t the best type of grill; there’s too much space between the heat and the dish so I can’t get it perfect). There’s a reason why, in a restaurant, they serve boiled eggs, scrambled eggs and fried eggs but not shirred eggs. Too much effort for something just okay.
Then at supper I started by making the first dessert of the year: Crème Renversée au Caramel. I made a custard by whipping some eggs and some egg yolks with some sugar and then pouring hot milk into it. I then lined a mould with a caramel that was perfect (one must always live life on the edge with caramel), poured the custard into it then put it in the onion. Only it didn’t exactly go down like that. You see it was slightly (very) over whipped so it was basically all froth. So dad had an idea to pretend it was a cappuccino and hold back the froth to pour in the custard. I then put it in the onion for about an hour in a water bath. Quality reveal at the end.
Then I made Sole Fillets Poached in White Wine and French Braised Peas. I folded the fish and seasoned it, then poured wine over it, brought it up to simmering point and put it in the onion for eight minutes. It was slightly overdone even though I did it for less time than she said. It was still tasty though. The peas I did by melting butter and water together, then tossing the peas in that. I put some lettuce on top and some peeled baby onions. I let it simmer covered for a half hour. These were fantastic. Now the big reveal. The dessert. It was awesome. I ran a knife round the outside and upturned it onto a plate and it came out with a plop. It wobbled, and the caramel sauce was sooo great (would have done double caramel though XD). Truly a feast.
Okay! I couldn’t get this out yesterday because I had to put a sheep in some paint (it was NOT happy). See you tonight!
