Monday 31 Aug 2020, four recipes down, 520 to go. I made ‘Côte de Porc Sauce Nenette’ served with ‘Carottes Glacées’ (glazed carrots) ‘and Petits Pois à l’Anglaise’.
The pork chops were sublime, cooked in lashings of butter and garlic. You fry them in smoking hot oil for three minutes a side and then transfer them to an oven at 160 degrees C (325 Fahrenheit). For me they were slightly overdone. I put them in for 25 minutes (she suggested 25 to 30) but they could have done with 20 instead. However it was extremely good and tasted like something out of a restaurant.
Sauce Nenette is a cream sauce made with a kind of roux, where the roux is made from tomato paste and mustard powder. You mix that together, and then reduce some cream by a third and pour it into the ‘roux’ a little at a time. Then you take the pork juices and reduce them down to a couple of tablespoons and then you add the sauce and reduce the whole thing down and add some parsley. It was slightly too thick and I would make some adjustments to the ratios but all in all it was gooooood.
The glazed carrots were a delight to eat. You cook carrots in brown stock, butter and sugar for 40 minutes until it gets all syrupy and delicious. There’s not a lot more to add really; a rip roaring success!
The peas were basically just buttered peas. You make them by boiling them, draining them, heating them in a pan with a bit of sugar to dry them off and putting them in a bowl with butter. Simple, but effective. Photos coming soon.
Today was a good start. I did four recipes (the stock, the pork, the carrots and the peas). I’ve worked out that I need to do 10 recipes per week. When you put it like that it doesn’t sound too bad does it? Is it a crazy plan? Absolutely YES. Do I regret starting it? Ask me in a couple of hundred days or so.
