Okay, its a brand new day, we have friends coming over tomorrow and i have to make something. Ive been given carte blanche and I found this very interesting recipe for an indonesian layer cake called ‘Spekkoek’ ( also known as Lapis legit, roughly translated as 1000 layer cake). So you whisk up 10 egg yolks with some sugar, until thick and pale, then in another bowl whisk 8 egg whites up until hard peaks, then add some sugar and whisk a little longer. Then cream some butter with – you guessed it – more sugar. After that you sift some flour, fold the butter into the yolks, then the flour, then the whites, divide the mixture in two, put some spices in one and then begin the 4 hour baking process.
So you might be thinking “Iggy wheres the layers? I see no layers” and to that I say be careful what you wish for my friend. For the baking commences! So… you heat the oven to about 180 degrees centigrade i think and also heat the grill you line a 20cm cake tin and pour a third of a cup of the spiced mixture in the bottom and spread it nice and thin so it covers the whole base. Put it in the oven for 10 minutes, take it out and place it under the grill for 30 seconds or so. Then take it out and spread a third of the plain mixture on top. Then rinse and repeat for the next 4 hours or until you’ve finished both mixtures alternating between the spiced and plain mix.
So that was a gruelling experience of hanging around the oven not being able to go anywhere a bit like if youre sick and have serious diarrhea and have to stay by the toilet for hours. Sorry, was that too far? I think that was too far. But anyway, I swore never to make it again because it was so painstakingly dull (and I usually love that kind of thing!). Until I tasted it.
It was gourgeous! Simple as that. Was it worth it? Pfff, no way. Will I do it again? Of course I will! The layers were great and it was a success.
So whats the lesson? Stay away from layer cakes! They are so annoying, impressive, but annoying. Unless you like dull days and things that are great for the gram, in which case go for it!
