Hey! You! Yeah you, how ya doing? What are you doing? I made just one recipe today, but it was a whole dish in itself! It was called Tournedos Henri IV. It was a piece of steak, on some bread topped with an artichoke heart and brought together with a bearnaise sauce and a jus. So very healthy! (that’s a joke btw)
To start, I boiled some artichoke hearts, then braised them in butter. Meanwhile, I balled some potatoes with a spoon and sauteed them uncovered for 5 minutes a side, then covered and cooked for 20 minutes. Then I fried some filet steaks for barely 2 minutes a side, removed them to a dish, added some wine and some stock, reduced, and made my bearnaise. I started by reducing some vinegar and lemon, beating some egg yolks and improvising. Now what I mean here, is that you can make certain sauces with a stick blender ( see my mayonnaise recipe here ) ? Well I decided to try that out here because I’ve made her recipe for it, so what have I got Toulouse. I poured the liquid into some egg yolks blitzing all the time, then I poured in some hot melted butter. It didn’t work. Anyway, thanks dad for beating another egg and adding the sauce gradually, it worked. Anyway, I added some parsley and assembled everything and it was really good. I don’t really get the bread, but I love a good steak no matter what.
That was nice, I really like artichokes. But anyway, I received some coffee scales today, so I made my best cup yet with my chemex! Thank you James Hoffman for this wonderful Chemex/V60 recipe, it is amazing. I have to go now, bye!
