What’s up? Gas prices? the sky? *BEEEP* cases? ( we don’t use that word here) I heard them all before. Whatever, today, I made Duck à l’Orange. It was really really good. I think that duck is my favorite meat. Me and duck go way back. When we went to france about 6-7 years ago, we had a lot of Magret de Canard. It became one of my favorite dishes and still is to this day.
I started off by simmering some sliced orange peel in some water, then I stuffed a duck with a third of the peel and put it in the oven at 220 degrees centigrade. After 15 minutes, reduce heat to 150. Then I made a sort of caramel by boiling down some vinegar and sugar until it reaches a “Mahogany brown”. First off, caramel would never get red, if your caramel goes red, visit your local health center, and also, mahogany come in lots of different colours! Am I supposed to get this colour or this colour? Anyway, you make a caramel. Then you add some madeira mixed with cornflour, the orange peel and some stock. Continue boiling until it becomes clear. Then, turn the duck half way through the cooking. After an hour, the duck is done. Remove it from the oven, place it on a dish, and add some madeira to the cooking juices. Reduce for a while, and pour into the mahogany caramel mixture. Swirl in some butter of enrichment, place some orange slices in a line over the duck, and serve. It was the best Duck à l’Orange I and my parents have ever had. The sauce was awesome. Not too sweet, and the duck was really fresh!
So that was good. I only did one recipe, but tomorrow I’m planning a big day! ANother dessert or three, because I have a lot of them to do! WHatever, whatever’s in the future is in the future. Goodbye!
