Today was a side dish day. I made brown braised turnips and braised peas with onions. To start off with, I boiled my turnips for 5 minutes roughly. Then I sautéed them in hot butter and oil. Then I added some stock, some sugar and some butter. I covered and cooked for about half an hour.
Then, I made the peas. I blanched them in boiling water. After that, I rolled them in a pan over a moderate heat to dry them out slightly, then put some butter and shallots in there. Cover and boil for 10 minutes. It was okay. The turnips didn’t have enoug sugar to properly glaze, ( I halved the sugar) yet it was still way to sweet. The peas were fairly nice, they were quite faffy though.
