Ok. Again, sorry for the late post. I’m really behind. Let’s get cracking (like some sweet black pepper). I made a celeriac remoulade. I started by match sticking (the knives at school are soo blunt I couldn’t cut them fine enough but it was still fine) the celeriac, then soaking it in lemon juice for half an hour. Then made a very mustardy vegan (I know! Julia Child doing something vegan!) mayonnaise by whisking some boiling water with mustard, then beating in the oil. After that, I added the celeriac and let it infuse for two hours. It was so tasty! The pieces of celeriac were a bit big but it didn’t matter.

Then I made the custard for the island. I did the same thing as the other day, but I let the milk cool quite a bit first so it was finger hot but not boiling. Then i turned out the island into a dish and smothered it in custard. Nobody rated it (I put the sheet out too late) but the general feeling was good. I personally forgot to taste some, apart from the custard which was EPIC.

Then supper. I was craving liver so we got some calves liver and had it with stuffed mushrooms and frozen spinach. I fried some onions and mushroom stems for the stuffing, then added some herbs, breadcrumbs and cheese. I brushed the caps of the mushrooms with butter and packed it in, and put it in the onion for 20 minutes. Then for the spinach I cooked it, covered in butter, for a couple of minutes, then uncovered it and cooked off the water. Then the liver. I heated up some butter and oil to a very high heat and then seared it for 3-4 minutes a side. The whole thing was a delight.

Sweet! I got five recipes down. I gotta go because my llama Ned wont stop barfing so I have to tend to him. Bye!
