Okay, quick review today. At lunch I made nothing. But when we got home I did. I was going to make some roast lamb but we didn’t have time so I decided to make moussaka thinking it would be quicker. I went into it with high hopes, Julia Child’s version of one of my favourite meals! It soon went downhill. I made a tomato sauce by frying some veg with some bacon and then mixed in some flour. After that I beat in some stock to make a kind of sauce velouté, I mixed in some tomatoes and some herbs and let it simmer for two hours. Then I took five aubergines (I didn’t have enough according to her but it was EASILY enough) and then I baked them in halves for 30 minutes. Meanwhile, I fried some onions and put them in a mixing bowl, then I squeezed some finely chopped mushrooms into the tomato sauce and sautéed them.
Then I (I’m gonna go fast here) scooped the aubergine flesh out and added half to the mixing bowl, sautéed the rest, cooked some mince, added that, then added some eggs, some herbs and some tomato paste and a jus lié that I made by mixing some cornflour and stock. Then I prepared the mould. Yes you heard that right, the mould. I lined it with the aubergine skins, then added the mince mixture, layering it with some of the sautéed aubergines and put it in the oven in a water bath for an hour and a half. I took it out and let it cool for ten minutes (could have used 15-20) and then *facepalms* turned it out on to a plate. I kid you not. Then I poured some tomato sauce on it. It worked but just, why? It took 4 hours (we ate at 10h00) and it was very average. It’s never gonna be bad, it’s meat and aubergines. But WHAT IS THE POINT? None. It was as if an alien had seen the definition of a moussaka. It has almost all the elements (I’m missing the bechalem and nutmeg and cinnamon) but it wasn’t quite right. Three recipes for not a particularly good supper.
