What’s up folks? Today was fairly productive , I did 3 recipes. I made a Steak sauté a la bordelaise, with a Gratin Savoyard, and Champignons sautés a la bordelaise (They don’t use any marrow or have anything to do a bordelaise sauce, so presumably she means for you to serve it with bordelaise). To start off with, I made the gratin in exactly the same way as a dauphinois (slice the potatoes thinly, put it in a dish with cheese, butter and milk and put in the oven for a while) only instead of using milk, I used stock and a tiny bit more butter
Next, I saute some mushrooms in some butter, put some breadcrumbs, shallots and garlic in it, cook it some more and add some parsley. I then sauteed some steak 2 minutes a side , same old same old, remove it from the pan, add some shallots and some wine, reduce to a syrup, then mix in some butter and marrow and a bit of parsley. The sauce was rich, deep deliscious, not quite marrowey for my liking, but all in all it was great. The potatoes were great, as always, and the mushrooms work super well with breadcrumbs.
