Today was good! Wait, am I losing my manners? I’m so sorry! Hi! How are you? Today I made Piperade for breakfast, then for supper I made some gratinated scallops, some ameliorated tinned mushrooms and parsley cucumbers.
To make the piperade, I started by sautéing some ham in some oil, then removing it from the pan, and adding some peppers and onions. Once tender, I added some tomatoes and cooked for 10 minutes on a low heat. Then I a separate pan, I added some some beaten eggs to some smoking hot oil, mixed a bit to lightly scramble, I then spread the vegetable mixture over the eggs and the ham on top. It was okay, I prefer my eggs more scrambled and less omeletty. I also hate eggs with tomatoes with a passion. There’s a dish officially called shakshuka ( though we just call it eggs and tomatoes. It is basically eggs poached in a tomato and pepper sauce) that my parents really like for breakfast. I would struggle to find a favourite dish ( though I have settled on fajitas for the moment), but this is my least favourite. Anyway, back to the point, this didn’t affect me in the same way as shakshuka. I’m not a great fan though
Then, I made supper. To start with, I shelled some scallops. There’s a knack to it, and basically you hold the scallop curved side down in one hand, a paring knife in the other, and you pass the knife down between the curved shell and the scallop to sever the muscle (Note, you may want to put your thumb in the opening to stop it from closing). Once you do that, it will just swing open and you can remove the black stomach sack and the eye string. Now that I shelled my scallops, I put some skinned deseeded cucumbers in a pan with some butter and in the oven for 40 minutes. When I was ready to eat I added some parsley. Meanwhile, I reduced some white wine down to half, added the scallops and some mushrooms and covered with water. Simmer for 5 minutes, removed the mushrooms and scallops and reduced the liquid. Then, I made a roux from flour and butter, and added the cooking liquid and some milk. After that (I’m using way too much transition words), I beat the sauce drop by drop into an egg yolk and some cream. Then I mixed the sauce with the scallops and vegetables, placed into some shells, covered in cheese and shoved under the grill for 15 minutes. To ameliorate my mushrooms I fried some shallots in some butter and added the mushrooms. It was all nice. The cucumbers I really liked, my parents not so much. The scallops are a good supper party dish, but I see them as a way to eat scallops if you don’t really like scallops.
