Hello friends! How are you? Did you know that it’s only 61 days until christmas? … Me too! Okay, so today was cool, I made one of my all time faves; RISOTTO. Her recipe is a base recipe so I added some stuff here and there. To start off, I fried some onions and some mushrooms to soften them slightly in a lot of butter. I then added some carnaroli rice (the best rice for risotto) and fried it over a low heat for about 5 minutes. It was at this point that I usually add my white wine, and I should have, but she didn’t use white wine, instead the butter did what the wine would have.
Next I added all the stock (alarm bells are seriously ringing) and put it in the oven at 180 degrees. After 5 minutes I turned it down to about 150-160 and cooked for 20 minutes. Next I started on my coffee soufflé. I made a bouilli sauce by mixing some milk with some flour, whisking and then adding some milk infused with coffee beans and some sugar . Heat that puppy up whilst mixing and add start separating your eggs – place your white in a bowl and the yolk in the bouilli sauce and beat, repeat with all your eggs. Then beat in some butter and dot the top with some more. Whisk the egg whites until soft peaks, add some sugar and let form stiff peaks, then fold a quarter of the whites into the sauce to slacken it off. Carefully fold in the rest, put in buttered and sugared mould and place in the onion at 200 degrees. Immediately turn down to 180.
Before serving I put some peas and some parmesan in the risotto. Now the tasting. The risotto was banging, it didn’t have enough wine in it which was a shame but still, it was great. It also didn’t have the nice stirred, mushy texture that you do on the stove top. The soufflé was kinda okay, not great. It didn’t rise that much even though I was very careful. It also tasted very eggy like if you add too much bicarbonate, I think it’s because to infuse the milk I boiled it and once you go over 70 degrees milk has a weird taste.
