Today was a nice day, I had to adapt a tad, we didn’t have any mushrooms so I had to do a different recipe, but it ended up being great. I made grilled chicken. It was so good. I started by melting some butter and painting it in the chicken. I put it in a pan and placed it 5 inches roughly under the grill, basting every 5 minutes with some melted butter. After 10 minutes turn it and cook on the other side for 10 minutes more. Meanwhile, beat some mustard with some herbs and some shallots. When the chicken had finished cooking, whisk in half the basting fat into the mustard like a mayonnaise and paint the chicken with the mixture.
Next roll them in breadcrumbs and put in the pan again. Baste with the fat and place under the grill for five minutes. Turn the chicken and cook for 5 minutes more. Ohh yeah. this was bonza. It’s my new favorite way to cook chicken! It was juicy, it was crispy. Basically great all round really.
That was good! we had it with some white beans. Truly a feast! I have to go now, my duck got fat so I have to eat it, bye!
