Okay. I’m behind. I’m sorry. I don’t know what happened but all of a sudden I’m a week behind. So I decided to do a mega-post to talk about everything I’ve done the past week. On saturday, I only made a dessert. We had bought some sweetbreads on thursday and forgot about them , on saturday we realised that we had them, but none of us felt up to the task so into the chicken enclosure they go! I ended up making a pear gratin. I peeled cored and sliced them and placed them in a buttered dish. Then I mixed some jam and vermouth together and poured it on top. I took some macaroons ( not to be confused with macarons) and crumbled them on top. I placed in the onion and half an hour later it was ready. It would be better with pulverized macaroons (which is what she said to do but I just couldn’t be bothered) but it was damn good.
Then on Monday I made creamed carrots and spinach with ham. The carrots I basically fried with some onions and butter, then I put some flour in it and some stock and continued cooking. At the end I beat in some egg yolks and cream into it. The spinach I boiled and then Cooked it over a low heat with butter. 2-3 minutes towards the end I added some diced ham. I also made croutons by toasting some bread and then frying in butter. These were good, but a bit complex for what they actually are.
The next day, at school I made a lime tart . It was light as air and delicious. I started off by making a flan pastry shell. You make it basically like a regular tart case, but the ratios were different so I won’t go into much detail . Then I whisked some egg yolks and sugar together, added some lime. Then heated it over a bain marie. Then I whisked some egg whites to soft peaks, then added some sugar and turned them hard. Then I folded the whites into the yolks and put it in the case. Then I put it in the onion for half an hour. It was very splodgy but it was soo tasty! It was like a soufflé in a tart case. It doesnt beat a good old fashioned tart, but it was still great.
The next day I made an apple clafoutis. To start off I sautéed some apple slices in butter, then added some sugar and some cognac, I let it stand for a while. Then I placed some milk, the apple liquid, some eggs, some flour and some sugar in a blender and blended on high for a minute. Then I put the apples in a dish, and poured the batter over it. I put it in the oven for an hour. It was so so good. It stuck to the bottom a bit, always butter it. I also made some paupillettes. To do this I minced some meat and mixed it with some onions and seasonings. Then I got some thinly sliced meat, placed the filling inside and rolled it up. I tied them, fried them and placed them in the oven with some liquid for an hour. Take them out, place them on a side dish and boil down the sauce. Then place them back in and reheat. They were a bit dry, they would have been better with cabbage instead of meat round the outside but still, they were great.
Okay, Friday I made some petits pots de creme. I made them in the same way as the creme renversee au caramel, only in small moulds. They worked of course, how could they not! then on monday I made a pear clafouti in the same sort of way as last time but just with pears instead of apples, and better. Truly a dessert to be reckoned with.
Nice. 8 recipes aint great for a week and a bit, but I promise I’ll get more on it. I’m really sorry. I just forgot to blog. Okay, I have to do something silly now. Bye!
