Cool. Today was a good day. I managed to cram four recipes into one salad. That’s fairly impressive if you ask me (!) I made her Salade Niçoise. I started by making her Potato Salad as a base. So I boiled some potatoes, drained them and cut them. I proceeded to cover them with a bit of white wine and let them infuse for a while. Then I made a thick vinaigrette (the vinaigrette from the potato salad recipe rather than the actual vinaigrette) and tossed them in it..
After that I blanched the French Beans (another recipe) which is simple enough – at first I thought they were slightly over but when I ate them they were fine. Now I boil some eggs and peel them. Then I made the Vinaigrette (this time for real). I thought it was a bit too oily but Dad didn’t think so; everyone has different taste buds I guess. There was also so much of it! I used 12 tbsp of oil (180ml/3/4 cup). The salad didn’t actually turn out too vinaigretty. I tossed some tomatoes and the green beans in some of it.
Now I have all the ingredients it’s time to assemble everything. I put some lettuce on the bottom, dressed it, then the potatoes, on top of that the tomatoes and green beans, and then some tuna, the eggs, some anchovies and some black olives to finish it off. Dress it and you have a great salad. I can see that if you’re coming from a diet of chicken nuggets and turkey twizzlers it could be magical. But I’m not. And I find that it’s too much work for a simple salad. Yes it is better than my usual one, quite a lot better even, but relatively it’s not worth it. I’ll post a recipe of my salad niçoise soon so you can see.
