Today I made five recipes. Not bad. How am I supposed to find intros for a whole year! Okay, I’m gonna get straight to it (saying that I’m gonna get straight to it is a lie because I could just not say it and it would be much quicker but hey, I need the read time). This morning I made Spinach Pancakes. I made the pancake mix as usual; eggs, sifted flour, milk and melted butter, use a blender to mix it (I lied, that’s not usual, I never use butter or blend it) and then blended it with some spinach. I mucked up the first pancake, my temps were too low, but then I was on it like a shakespearian sonnet (poet’s son, I got the pass). They tasted (don’t say good DON”T SAY GOOD) epic. They were spinachy without being too spinachy, they just had all round pizzazz. Sweet stuff dude!
Then supper. At supper I made side dishes and had them with garlicky mash and sausages. I made White Braised Onions (THE Julie made these on the 20th September 2002 and me on the 21st 2020, sooo … collab?) then changed them into Parsley Onions, and Ameliorated Tinned Peas. To make the lipsmacking onions all you need to do is peel individually each little one of these sods and then cook them covered for 40 minutes in some wine and butter with some ‘erbs. These were truly buttery and balls of delight. To turn them into parsley onions you add parsley and butter to them. So complex stuff. After this I ameliorated some tinned peas by frying some shallots in (you guessed it) lots of butter. Add the drained and rinsed peas and a bit of mushroom broth. Cook covered for a couple minutes then uncover and boil off the liquid. They were tasty and definitely better but that begs the question, are tinned peas bad. The answer is no. They are little morsels of joy.
That’s it for today! Five recipes ain’t bad so I’m happy! I have to go now, I’ve got some honey bees waiting for me at Innisfree. So I shall arise and go, bye!
