Pinch punch first of the month no returns! Today I made 2 recipes, and I’m approaching half way! I’m making fairly good time, I reach half way on my time in March, but I’m about 6 recipes from reaching half way on my recipes, so I’m a month ahead roughly. Need to hurry up! Whatever, today I made mushroom-stuffed aubergines with mornay spinach.
To make the mornay spinach, I boiled it, I drained it, I added some flour and butter, I cooked it, I added some cream and I spread some precious cheesy bechalem on top. 20 minutes from eating, I put it in the oven. Now, the aubergines. I salted some halved aubergines and I put them flesh side down on a tray. Next, I put them under a grill with a job lot of olive oil, for a lot, lot longer than she said. They were still barely cooked. Anyway, we’ll go with it, I cooked some onions long and slow, added some chopped onions and cooked for a while. I then placed my duxelles in a bowl, I scooped out the flesh from the aubergines, added it together with some cream, and mixed. I stuffed the aubergines with the mixture, and grated some cheese on top. 40 minutes in the oven later, it’s ready. It wasn’t great. The flavour profiles of aubergines and mushrooms are so close, that they can’t really compliment each other, and what is the cream doing really? I want some tomatoes, parmesan etc! Also, the mornay sauce was nice, but what is the spinach doing?
That was vegetarian! Not sure it was what you can call good, but it was a thing. Ok, I have to, no , I want to go now. Just kidding, but I am watching an awesome series on Netflix about a gentleman thief. Bye!

Hi Iggs, I love Aubergines but nobody else does in this house. True about the mushroomyness…(made up word. Mushrooms are great too.
