Breakfast
Okay. I didn’t manage to get this out before supper so it won’t be too detailed. I made Oeufs en Cocotte for breakfast and it was the best I’ve ever made. It could have done with a couple of minutes less (the cream really lures you into a false sense of security) but it was so good and I think I get the recipe. I’m gonna redo this because its so good. I’ll put the recipe if you want later.
Lunch
I then made Gratinated Gnocchi for lunch. I made them by making a choux paste. You do that by melting butter in water and then mixing some flour into it, cooking it until it forms a film on the bottom of the pan, and then beating some eggs into it. So you take the paste and you mix it with some mash. Then you roll it up, cut it up, and simmer (never allow to boil or they will disintegrate). Now you gratinate them. You drain them, grate some cheeeese on them and bung em in da oven under da grillll. They were slightly like mash but they were still really good.
Supper
I made Cheese Soufflé. Oh my god was it good. It was fluffy, light and definitely aerated. I got it all done in about an hour too! (including half an hour baking). I made a sort of béchamel by melting some butter and adding flour and cooking it for a couple of minutes. Then you take some boiling milk and bosh it in all at once. Stir and return to the heat to thicken slightly. Now add egg yolks one by one and beat vigorously. Beat the egg whites with a bit of salt until stiff peaks. Then fold the whites and some grated cheese into the béchamel and put in a big soufflé dish. Shove it in the oven and in 30 minutes you’ve got the lightest soufflé you’ve never tasted. And so tasty too.
