I only made lunch today so… hi? I made some choux paste to commence. To do this I melted some butter in some water, then beat in some flour. I then returned it to the heat whilst stirring until it formed a film on the bottom of the pan. I beat in 4 eggs one at a time. To turn it into gougeres, I mixed some chizz in with it and piped (I used a spoon but it doesn’t matter) some blobs. Then I put them in the oven for 20 minutes.
Then I made a duxelles by chopping some mushrooms very finely and squeezing them in a corner of a cloth. Then I sautéed them with some onions in some butter for 5-10 minutes. Then i crammed the duxelles into the gougeres. They were okay, this is probably one of my favorite party dishesso I’ve made it quite a few times before. The paste I usually make has milk in, and it puffs up less, but tastes much better. These tasted too eggy. The duxelles also is very different, I usually add a bit of cream to make it into a luscious thick sauce but this was more like plain old mushroom.
