Hi! How are you? Today was super unhealthy (and not Keto in the slightest) but I still got 2 recipes, so at the end of the day, I just poisoned a bunch of kids and got away with it! Okay, all jokes aside, today I made a baba paste and put it into some donut shaped rings to make petits savarins. Then I glazed them with a makeshift strawberry syrup to make them more delectable.
To make this, I started by melting some butter, and letting it cool. Then I beat some fresh yeast with some sugar to make a wet paste, I beat in some eggs (4!), some flour and the butter. After that, I kneaded it for 5 minutes and let it rise for 2 hours. I then knocked it back, put it in the moulds making little sausages and curling them round the center, and let them rise for another hour or so. Once risen I put in the oven for 15 minutes. After they had been glazed, they were rather pleasant. They resembled brioche doughnuts. I was really supposed to soak them in rum or kirsch, but that wasn’t technically in the recipe for the mini savarins, plus it’s illegal to take booze to school so thats sad.
