This is one of the most delightful coulis in the world. No joke. It is sweet but not too sweet, and what’s more you can freeze it and it will last indefinitely! (if there’s any left of course 😂) You simmer 600g of blackberries, 400ml of water, 3 dsp of sugar and the juice of 1/2 a lemon until completely mushy, then pass it through a seive to get out pips or pulp, and then put 175ml of sloe gin in and simmer for a few minutes to evaporate the BOOOZE! If you want at this stage you can add 4 soaked gelatine leaves to make it into 6 wonderful adult jellies! Allow to cool for 5 minutes and pour into moulds/serving jug. Serve cool. This goes extremely well (in coulis form) with any chocolate dessert!
