Hi ! I recently found out that you could make chocolate mousse super easily by whisking water and chocolate! crazy right? this makes for a much lighter mousse, it doesnt have the same excact texture, but it defo hits the spot. you can make it vegan by using vegan chocolate, or more exciting by replacing some or all of the water with some rum or orange juice. Basically you take 105mL of boiling water and pouring it over 90g of chocolate and whisking until it cools and thickens, this should take about 10 mins. Be careful though; it happens all at once, best do it a tad too little rather than a tad too much or it will become grainy. This is courtesy to the one and only Heston Blumenthal!
