this is a very light recipe for one of my favorite desserts. It is great for a supper party and is so satisfying to make.
30g butter
6tsp sugar (for the moulds
3 egg whites
1 1/2 bananas
1 1/2 tsp sugar
Preheat oven to 200°C/180°C fan, put a baking sheet in to heat. Grease 5 moulds with the butter and then the 6tsp of sugar. Blend the bananas to a puree.
Whisk the egg whites to soft peaks, then add the tsp and a half of sugar, continue to whisk for 5 to 10 seconds more
Fold a third of the egg whites into the banana to slacken the mixture and then the rest.
Divide evenly between the ramekins and run your thumb round the edges to create a top hat effect.
Place on the preheated sheet and bake for 10 mins
