Hi! How are you? Today I made a nice few dishes, very french to say the least. I made a veal scallop, with a little sauce called a sauce chasseur. It is probably the most french sauce I know of. I served it with some lovely assortment of vegetables, based around the forest.
To start off, I braised the carrots in butter, like I’ve done about 5 times before, by placing them on the heat in a covered pan with some water and butter for half an hour. Then I sauteed some mushrooms in butter, and but them in the carrots with some artichoke hearts. I reheated it when I was ready to eat. I then fried a couple of veal scallops, in a lorra budda. I then added some tomatoes (tinned), garlic, stock and a tad of vermouth, and boiled for 10 minutes. Then added some sautéed mushrooms and reduced for a further 1 minute. While it was good, I mean, it wasn’t bad, I wasn’t incredibly taken by it. I think, if I used fresh tomatoes and reduced them a bit more, it would be better because it still had a slight uncooked acidic hint. The forest carrots were amazing, the addition of peas would be a welcome friend (we had it with peas and if they were actually IN the carrots, they would be even better)
Okay . I liked todays meal, it wasn’t amazing, but it was good. Anyway, I gotta go, because some random fortune teller said that if I continued to write today, I may get hemorrhoids. See ya!
