That’s right! It’s me! again… Today I made 4 recipes! Not immensely efficient but not at all bad. To start, I made some mornay-gratinated, quarter-chopped, butter-braised artichoke hearts. Yay. Then I made some duxelles rice and chicken chasseur. To make the artichokes, I boiled some hearts in a bit of lemony water, drained them, quartered them, and braised them in butter. Meanwhile, I made a mornay sauce. Now do we all know what mornay is? That’s right! Bechalem and cheese baby, bechalem and cheese. Then I continued cooking the artichokes in the oven covered in sauce. It was really nice. It feels slightly like artichokes for people who aren’t sure about artichokes, but it tasted great.
Next, the main course. I started by cooking some rice, then when I was ready to eat I fried some mushrooms and shallots and added the rice. To make the choicken, I fried it in some hot butter for a couple minutes a side, then I covered and cooked for a further 25 minutes, turning once. I removed the chicken, and fried some mushrooms in the fat. Then, I added some stock, reduced and added some tomato, some seasoning and some dried basil. after a while of reducing, it was ready to eat. The chicken was juicy and delicious, the rice was perfectly cooked and buttery, the sauce with a bit garlic was nice, very french.
Nice. I like chasseur sauce. Do you all remember home pride? I know I don’t! I wasn’t around at the time. Whatever, the past is in the past, and don’t let anyone tell you any different! I have to go now, so bye.
