Today was a short day, so short blog. I made endives gratinees. I started by preparing by endives (washing them etc) and placing them in a pan. Add some water and smear with butter. Then cover and boil for 10 minutes. Uncover and boil for a further 10. Cover with some paper and place in an oven at 130 degrees for an hour. Then cover and cook for a further 30 minutes.
Next I made a cream sauce. Basically, the second a drop of cream hits a bechalem sauce it becomes a cream sauce. So I made a bechalem, do I really need to go over how to make one? Then I added the cream by the spoonful, whisking. I poured this sauce over (and under) the endives, then slapped it under the grill with some grated cheese on top. It was okay… Not great. It was waay too heavy, not really that tasty, the endives were a bit burnt. Hmm…
That was not great, but I still got 2 recipes down! Anyway, stay cool! cya!
